Categories: Meals, Legumes Samos Fava Puree Ingredients: (meze for 6-8 persons) For the fava: 250g fava 1 onion, medium-sized, coarsely-chopped 1 carrot, coarsely-chopped 1 clove garlic 50g olive oil 4-5 sprigs thyme 1 bay leaf 1.5 litres water Salt Pepper Juice of 2 lemons For the serving: Onion slices Parsley Olive oil Dried oregano INSTRUCTIONS: For the fava: Put all of the ingredients – except for the lemon – into a pot. Allow it to cook on low heat for about 40 minutes, until the ingredients have mashed. Remove from the burner. Pour in the lemon juice. Pulpify for a few minutes using a hand blender, until it becomes a smooth cream. Let the fava cool down. Serve the fava on plates, topped with the sliced onion, parsley, olive oil and oregano.
