Samos Τrahanas with Vegetables and Armogalo
Ingredients:
(for 4 servings)
200g trahanas
200g armogalo
2 carrots
2 courgettes, medium-sized
1 onion, large
2 ribs (stalks) celery
1 clove garlic
2 tomatoes, ripe, fresh, grated
400ml vegetable broth
100g Samos graviera, grated
100ml Samos dry muscat (moscato) wine
50ml olive oil
5 basil (broadleaved) leaves
Salt
Pepper
Instructions:
Pour the olive oil into a small pot, along with the vegetables, which have previously been cut up into small cubes (except for the grated tomato). Add salt and sauté over medium heat, so that everything caramelizes. Add the trahanas, stir for one to two more minutes and quench with the Samos white muscat wine. Add the grated tomato, and gradually incorporate the vegetable broth slowly, letting it absorb its liquids each time. Taste the trahanas, and when it is ready and has no excess liquid, remove the pot from the burner. Add the Samos graviera, the finely-chopped basil leaves, salt and pepper, and mix.
Serve the food on plates, and then add the armogalo.
