Octopus Fritters
Ingredients:
4-5 octopus tentacles, cut into slices
2 egg yolks
2 egg whites (beaten into a meringue)
1 onion, medium-sized, finely-chopped
4-5 basil leaves, finely-chopped
4-5 spearmint leaves, finely-chopped
½ bunch of parsley, finely-chopped
Salt
Pepper
Skins of 2 tomatoes, medium-sized, finely-chopped
Self-rising flour (as needed)
Instructions:
Place the octopus in a metal bowl along with all of the other ingredients – except for the flour and the meringue.
Stir, add the meringue, and then the flour, until it all becomes a unified, single mixture.
Fry the mixture in hot olive oil, adding it to the pan with the help of a wet spoon.
Fry the fritters on both sides. When they are ready, remove and place them on absorbent kitchen paper towel.
Optionally, garnish with a dill-based yoghurt sauce.
