Mushroom Fritters (Manitarokeftedes)
INGREDIENTS:
(for 20 pieces)
500g white mushrooms, finely-chopped
1 bunch parsley, finely-chopped
2 cloves garlic
1 onion, finely-chopped
1 sprig rosemary (leaves only), finely-chopped
3 tbsps olive oil
1 egg
4 tbsps graviera cheese, grated
2 cups breadcrumbs
Salt
Pepper
INSTRUCTIONS:
Heat the olive oil in a frying pan.
Add the mushrooms, salt and pepper, and sauté until withered.
Add the onion, garlic and rosemary, and continue sautéing, until these wither as well.
Remove the frying pan from the burner and let it cool down for a little while.
Add the remaining ingredients – except for the breadcrumbs.
Knead while simultaneously adding in the breadcrumbs, until a tight mixture results.
Shape into little fritters.
Bake in a pre-heated oven at 200 degrees Celsius for 20 minutes, until they brown.
