Lamb Chops with a Crust of Aromatic Herbs

Ingredients:

 

300-400g lamb chops (French-style cut)

2 tbsps mustard

300g breadcrumbs

100g dill, finely-chopped

200g parsley, finely-chopped

4-5 spearmint leaves

Salt

Pepper

2 cloves garlic, finely-chopped

200g spinach (baby), fresh

200g potatoes, boiled, diced

200ml Samos white wine

150ml olive oil


Instructions:

 

Season the ribs with salt and pepper, and sauté them in hot oil until they brown. Let them cool for a little while.

Using a brush, spread mustard on the front part of the ribs, and place that side upon the breadcrumbs, which have previously been mixed with the aromatic herbs.

Bake in a preheated oven at 170 degrees Celsius for 18-20 minutes.

In the meantime, sauté the boiled potato cubes in a pan, add the spinach and quench with the white wine. Finally, add salt and pepper.
