Fava Puree Fritters (Favokeftedes)

INGREDIENTS:

(for 20 pieces)

 

500g prepared fava

1 onion, finely-chopped

2 eggs, lightly-beaten

½ bunch parsley, finely-chopped

½ bunch fennel, finely-chopped

Juice of 1 lemon

4 tbsps breadcrumbs

Salt

Pepper

Flour for breading

Olive oil for frying

Lemon slices as serving accompaniments


INSTRUCTIONS:

 

Put all of the ingredients together in a bowl.

Combine thoroughly, and then shape into small, elongated fritters.

Heat the olive oil in a frying pan.

Flour the fritters and fry a few of them at a time, for just a few minutes, until they brown.

Serve with the slices of lemon.
