Samian Potato Salad

INGREDIENTS:

(for 4 servings)

 

For the potato salad:

1kg potatoes

1 onion, finely-chopped

4 spring onions, finely-chopped

1 cucumber, finely-chopped

150g green olives “tsakistes” (“cracked”), finely-chopped

5 hard-boiled eggs, finely-chopped

2 tbsps capers

3 tbsps parsley, finely-chopped

2 tbsps basil, finely-chopped


For the sauce:

Juice of 2 lemons

3 anchovy fillets

4 tbsps sour milk

2 tbsps mustard

½ cup olive oil

4 tbsps vinegar

Salt

Pepper


INSTRUCTIONS:

 

For the potato salad:

Boil the potatoes – skin-on – for about 40 minutes, until soft.

Peel them and then cut them into large pieces.

Add the remaining ingredients, and mix.


For the sauce:

Put all of the ingredients into a blender.

Pulpify, and then pour over the salad.

Mix and serve.
