Tomato Fritters

INGREDIENTS:

(for 20 pieces)

 

For the tomato fritters:

4 ripe and firm tomatoes, finely-chopped

1 onion, finely-chopped

3 tbsps parsley, finely-chopped

3 tbsps spearmint, finely-chopped

100g dry mizithra, coarsely-grated

½ tsp smoked paprika

250g (approximately) all-purpose flour

Salt

Pepper

Olive oil for frying


Serving accompaniments:

yoghurt

spearmint leaves


INSTRUCTIONS:

 

For the tomato fritters:

Put all of the ingredients – except for the flour – into a bowl.

Mix well.

Slowly add the flour, while stirring continuously, until it iturns into a relatively thick dough.

Heat the oil in a large frying pan.

Fry the tomato fritters on each side for a few minutes, until they brown.

Serve with yoghurt and spearmint leaves.
