Tiganites (Greek-Style Pancakes)
INGREDIENTS:
(for 20 pieces)
For the tiganites:
500g self-rising flour
¼ tsp salt
½ tsp baking powder
1 tbsp olive oil
2 eggs, lightly-beaten
200g yoghurt
Olive oil for frying
For serving:
Anthotyros
Honey
Roasted sesame
INSTRUCTIONS:
Put the flour, salt and baking powder into a bowl and mix together.
Form a pothole-like depression in the centre.
Add in the olive oil, eggs and yoghurt.
Mix very well using a hand whisk.
If the dough is too tight, add a little milk.
Allow the dough to rest for 30 minutes.
Heat the olive oil in a frying pan.
Form little balls from the dough and press down on them so as to flatten them.
Fry the flattened dough pieces for about 2 minutes on each side, until they brown.
Remove from the frying pan and place them on kitchen paper towel for the oil to drain.
Serve with anthotyros crumbs, honey and roasted sesame seeds.
