Small Pies filled with Sweet Pumpkin
INGREDIENTS:
(for 24 pieces)
For the small pies:
1 packet shortcrust pastry (fyllo kroustas)
700g yellow pumpkin (net weight)
500g golden apples (net weight)
200g orange juice
Zest of 2 oranges
60g butter
200g sugar
100g raisins
120g walnuts, finely-chopped
1½ tsp cinnamon
150g coarse semolina
Olive oil for the pastry sheets
Powdered sugar for serving
INSTRUCTIONS:
For the small pies:
Heat the butter in a saucepan.
Add the pumpkin, apples, orange juice and zest, and sugar.
Boil the contents of the saucepan on high, stirring and pressing them with a large spoon until everything is mashed and the liquids absorbed.
Remove from the heat source.
Add the remaining ingredients, and mix well.
Allow the filling to cool.
Roll out a sheet of dough and oil it.
Place filling on each part of the sheet, lengthwise
Wrap the sheet like a roll and then form it into a spiral shape.
Repeat the process with the remaining filling and dough sheets.
Coat the pies with oil and bake in a pre-heated oven at 180 degrees Celsius for 40 minutes.
Remove from the oven, and give them some time to cool.
Sprinkle with powdered sugar and serve.
