Katimeria (Pancake-Like Sweets)
INGREDIENTS:
(for 8 servings)
For the katimeria:
450g lukewarm water (approximately)
25g fresh yeast
1 tsp sugar
50g souma or ouzo
750g hard flour
250g yellow flour
1 tsp salt
Olive oil for frying
Serving accompaniments:
Grape must (petimezi)
Walnuts, coarsely-chopped
Cinnamon
INSTRUCTIONS:
For the katimeria:
Pour the water into a bowl.
Add the yeast and the sugar.
Mix until the yeast and the sugar have dissolved.
Pour in the souma or ouzo, and gradually add the flour and salt.
Knead until it has turrned into a soft, smooth dough.
Cover with a towel and leave in a warm place for about half an hour, allowing the dough to rest and rise.
Uncover and knead gently, so as to remove all of the air from the dough.
Divide the dough into little balls (about 30-40g each), and flatten and spread them out by hand or with the help of a rolling pin, forming them into little pancakes.
Heat up the olive oil and then fry the katimeria, a few at a time.
Fry for about 1-2 minutes on each side, until they brown.
Put the katimeria on kitchen paper towel to drain and repeat with the rest of the dough.
Serve the katimeria with grape must (petimezi), walnuts and cinnamon.
